So, this really sweet man of mine recently surprised me with Gwyneth Paltrow's Cookbook "My Father's Daughter." I had heard of her book after reading another fun blog I follow, and just mentioned it in passing. Now, I have to admit, I am not a huge fan of hers, but this cookbook is beautiful.
Honestly, I sat down and read it like a book! The pictures are gorgeous, and her stories are sweet and down to earth. I have to say I appreciated her cookbook more than her movies!
First recipe I tried? The blueberry muffins! I have tried to make blueberry muffins many times, and have never had any success. Either they were too tart, or all of the blueberries sunk to the bottom, and the top half was all batter (yes, I even dusted them all with flower before stirring them in...I ain't no novice) :)
BUT, I gave these a try and man, they were G.R.E.A.T. The batter was thick, almost like cake batter, and once you filled the muffin cups you lightly dust the tops with a bit of sugar.
The result? Hot, perfect muffins with a delightful sweet "crunch" on the top!
Notice how the blueberries didn't sink this time? It's just because the batter is so thick and rich. I prefer to eat them hot with a dab (ok, a blob) of butter :)
So give Gwennie a try...you won't be disappointed!
