To be honest with you, I have never called this recipe "Hobo Burgers" until meeting my cousin-in-law. We always just called them "hamburgers in tinfoil," and I know you are amazed by our originality ;)
Either way, they are a great weeknight meal, and pretty healthy too (I always use 93% lean ground beef). Plus, it's a one packet wonder, and you throw away the rest!
They basically require three simple ingredients: lean ground beef, potatoes (I used Russets), and onions. Forgive me, but I am working on my photography and there is NO good way to shoot ground beef and make it look appetizing... :)
Now, preheat your oven to 350 degrees.
Slice the potatoes and onions thin (just shy of a 1/4 of a inch thick).
Patty up your hamburgers. I got three out of a pound of ground beef, but they were quite small. I would recommend decreasing the baking time if you make them this small.
Lay out as many sheets of tinfoil as you have hamburgers. I would say they should be at least 12 inches wide.
Then, you start stackin'!
You lay down your hamburger patty, add a layer of potato and a layer of onions. I also drizzle this layer with a little EVOO and S&P. Plus, it's added entertainment since it's like a meaty game of Jenga! ...gross.
Then, add one more layer of potatoes, onions and EVOO and S&P. You may need to "smush" it down a bit by this point :)
Next, simply wrap up your little Hobo packet and place on a baking sheet (just in case they leak).
Bake for 45 minutes, or depending on your oven's temperature. Also, the thinner your vegetables, and the smaller your hamburger patties, the shorter the cooking time.
Once done, let them sit for just a minute with the packet open so you don't give yourself a steam facial (no, it's not the same as Spa Sydell - tried it, promise).
Some other great additions are carrot slices and mushrooms - if you are feeling fancy :)
I used to love to just open the packet right up and create a little tinfoil pocket for my ketchup. But you could just serve it on a plate too - you fancy person you.

And now I want one! :-) But it is 3 am and I am up feeding the little one, so not exactly the time to be downing some ground beef. You seriously can't beat a good Hobo Burger all smothered in ketchup. The way all of the flavors meld together is just divine!
